Tahini Espresso Protein Shake

As promised, here is the first of a few recipes I will be featuring using Mushroom Matrix’s Fit. This protein shake happens to include a few of my favorite brands and flavors all together in one delicious (and totally healthy) post-workout shake. Who would’ve thought that things like tahini, coffee, pears, bananas and mushroom powder would go together? I wouldn’t have at first but trust me, this was one extremely happy accident that I discovered. I even boosted it with some Growing Naturals Vanilla Blast rice protein, so this entire smoothie has almost 30g of plant-based protein. The added Mushroom Matrix makes it complete with an added boost of immunity, while helping fight fatigue and increase your fitness performance. You don’t even have to drink this shake after a workout, but I can promise that it’s a super satisfying treat to have after your morning gym session or run outside. Let’s face it, we all want to get in more exercise now that the New Year is upon us. This decadent shake makes it all worth it!

First off, I am a big fan of throwing some organic and fair trade coffee into a smoothie every now and then. Chameleon Cold Brew happens to be one of my favorites of all time, whether it’s poured over ice or enjoyed in a frozen coffee shake. I do recommend that if you make this recipe, that you have it in the morning because it does contain some caffeine. Though, I find that because this smoothie also has some fruit, healthy fats, and added protein, it doesn’t give you a crazy buzz or jittery feeling that coffee can give some people on an empty stomach.

You can modify the ingredients in this smoothie if you don’t have all of them on hand, but I truly recommend the protein and mushroom powders to aid your fitness goals and overall wellness. Sometimes, it’s worth it to splurge a little on products that will make you feel your best. Plus, they make quite a spectacular smoothie when combined!

Tahini Espresso Protein Shake
Serves 1
A protein-rich shake with superfoods galore to help with immunity, fighting fatigue and increasing performance in fitness and overall health.

Ingredients
  1. 1/2 cup Chameleon Cold Brew black coffee concentrate
  2. 1/2 cup water
  3. 1 heaping Tbs tahini
  4. 1 pear, sliced
  5. 1/2 frozen banana
  6. 1/2 tsp maca
  7. 2 dates, or alternative sweetener
  8. 1 tsp Mushroom Matrix Fit
  9. 1 scoop vanilla plant-based protein (optional)
  10. ice
Instructions
  1. Place the coffee, water, dates and tahini into a blender and mix until smooth. Slowly add the pear, maca, frozen banana, and Mushroom Matrix. Lastly add the protein powder (if desired) and ice, and after blending test for sweetness. Add an extra date or half a banana if you like it a little more sweet. Serve it poured into a large glass or bottle topped with ground coffee or espresso powder.

    This sounds amazing!!! So creative! I’ll have to look into Mushroom Matrix. We use reishi mushroom powder in smoothies and love it!

    Thank you Mandy!! I was so amazed that it turned out so well that I just had to share it! Mushroom Matrix has a ton of products to fit everyone’s specific needs. Plus, the powders are unflavored so you don’t even know they’re in your smoothie. I hope you get the chance to try their products too!
